Butter Cookies In a medium bowl, whisk together flour and salt. In a medium bowl using a hand mixer, beat butter and sugar until light. It had to be buttery, a little crumbly (like shortbread), and not too sweet.

  1. It's 500 g of all purpose flour.
  2. You need 350 g of unsalted butter.
  3. It's 180 g of brown sugar.

  1. Cream butter and brown sugar until well combined.
  2. Add in flour in two portions just until flour is properly incorporated. Don't over mix..
  3. Roll out between parchment sheets, place in the fridge for 10 minutes..
  4. Take the dough off the parchment paper, cut out desired shapes with a cookie cutter..
  5. Place on a baking tray and bake for 10-12 minutes at 160 degrees celsius..
  6. Leave to cool completely before handling..

The dough is like my spritz cookies, but with a little milk to make it pipe-able. Make sure it's properly softened to room temperature before beginning. I made the ice box version because it's so quick. Used colored sugar to make them pretty. I really need to find an easy to use cookie press because I'd love to make the spritz version.
