  10. It's 1.5 tsp of Ginger garlic paste.
  11. Prepare 1.5 tsp of coriander powder.
  12. You need of For Gravy.
  13. It's 1 tsp of oil.
  14. It's 1 inch of cinnamon stick.
  15. It's 2-3 of cloves.
  16. It's 2 of cardamom.
  17. Prepare 2 of dry red chilies.
  18. Prepare 1 of green chilli slit optional.
  19. Prepare 1 of big onion roughly chopped.
  20. Prepare 3-4 of big tomatoes roughly chopped.
  21. It's to taste of salt.
  22. Prepare 1 teaspoon of sugar.
  23. You need 2 tbsp of cream.
  24. You need 1 tbsp of milk.
  25. It's 8-10 of cashews.
  26. You need 1/2 tsp of red chilli powder.
  27. Prepare 3 of garlic cloves.
  28. It's 1 tbsp of crushed kasuri methi.
  29. You need 1-2 drops of Food colour - optional.
  30. Prepare of For Garnish.
  31. You need 1 tbsp of butter.
  32. You need 1 tsp of Melon seeds.
  33. You need 3 tbsp of chopped coriander leaves.
  34. Prepare 1 tbsp of cream.

Butter Chicken instructions

  1. Mix all the ingredients under marination section with chicken. Rest aside for 1 hour at least. Longer the marination, better the taste.
  2. Heat 1 tablespoon oil and 1 tablespoon butter in a pan.
  3. Add cinnamon, cardamom, cloves, whole red chilies and garlic. Saute for a minute or till fragrant..
  4. Add onions and saute until translucent.
  5. Add cashews and tomatoes. Saute until tomatoes are tender. Cool the mixture completely.
  6. Grill the chicken in tandoor or oven until 60% done. Any excess marination can be used while making gravy.
  7. Grind the mixture with 1 tbsp cream and 1 tbsp milk to smooth puree.
  8. Heat 2 tbsp butter and 1 tsp oil in a pan.
  9. Add ground puree and saute for 3-4 minutes. if using food colour, add now and mix well.
  10. Add semi grilled chicken and mix well.
  11. Add red chilli powder, salt, sugar, 1/2 cup water and any left over marination. Mix well. Add green chilli if required for additional spiciness.
  12. Cover and cook until chicken is done stirring occasionally.
  13. Add cream, kasuri methi and mix well.
  14. Garnish with fresh cream, chopped coriander leaves and little butter. Sprinkle lightly roasted pumpkin or melon seeds on top. Serve hot with roti or naan.
